Grilled Chicken Burger

                                                                                     Ingredients

8 Boneless skinless chicken breasts
8 Burger buns (whole wheat, optional)
2 Round, plump tomatoes, sliced
4 Romain lettuce leaves. Cut in half
1 Ripe avocado, sliced
1 Cup shredded sharp cheddar cheese
1 Cup shredded mozzarella cheese
1/2 Cup Mayonnaise
Juice of one lemon or lime
2 tbs Olive oil
1 Tablespoon sea salt.
1 tsp Ground black pepper

Preparation

1)In a zipper gallon size bag, combine lime/lemon juice, olive oil, salt, black pepper and rinsed chicken. Close the bag and mix all ingredients with the chicken. Refrigerate for 30 minutes to marinade.

2)Mix the cheese in a bowl. Set aside.

3)Prepare the grill at medium heat. Cook the chicken about 5 minutes each side or to desired wellness. Top with cheese as soon as it come out of the grill!

4)Burger ensemble: Spread mayonnaise on both bun slices. Place an avocado slice on bottom slice, top with chicken, tomato slice and lettuce and top bun slice.

*Ketchup and mustard are perfect companions! Serves 5+
