3 Carrots
1 beet
Salt to taste
1/3 cup Onion  finely chopped
Mayonnaise to taste
1/4 cup Olive Oil
2 Boiled Eggs

Easy Preparation:
1) Boil peeled carrots with beetroot (unpeeled), until they are cooked (tender to the fork) (tip: start boiling the beets first, then add carrots or cook separately)
2) Then peel and dice the beets, eggs, and  carrots
3) In a bowl add olive oil, mayonnaise and salt to taste, onion and mix
